I found Carol Watts at Mad Hatter Cakes on accident. I had another cake baker already lined up, when she fell through and left me 2 months from my wedding (11-11-11) without a wedding cake or groom's cake. Carol was great. She took me on, ev...en though I had an extremely popular date and produced cakes beyond my wildest dreams. I had a 5 tier, 5 flavor fondont covered cake that fed 135 people and it was beautiful and elegant. It had gum paste flowers and all. I also had a 3D couch with sculptures she made out of modeling chocolate of my dogs for my groom. He was so surprised that the cake made him cry (we lost one of our dogs only months before the wedding). She did such a great likeness of the dogs and the cakes, although all different flavors, all tasted amazing! If you need a cake artist, book early. Carol has a small operation and books up quickly. She is well worth every penny you will spend. I am so happy that my happy accident happened!! She was better than I could have ever imagined!
