There are tons of things to do! We will update with more information closer to the date, including tours around the Fez medina. In the mean time, if you are looking into planning your trip, and want to see other cities in Morocco, we would suggest Marrakesh, a historic Moroccan city! There are also desert tours to the South of Morocco which are very fun. Casablanca is the biggest city in Morocco, but would describe it more as a NYC type city, less tourism, but more high end shopping and business!
