Francisco Ruano looks to decipher the flavours of his home state of Jalisco through traditional flavours and textures. But his Mexican cooking has a distinctive European influence as a result of time spent at big hitters such as El Celler de Can Roca, Mugaritz and Noma. Alcalde was named as One to Watch in 2016 before ranking as the Highest New Entry in 2017’s Latin America’s 50 Best. Vibrant dishware and smart plating make visiting a Guadalajara must. Star dishes include suckling pig with black mole and aguachile beef tartare. Mezcal and tequila lists are also ample.
Translating as ‘the dozen’, La Docena specialises in bivalves and chef Tomás Bermudez allows the oyster to take centre stage. The bar and grill – combining famed elements of New Orleans and Buenos Aires – puts a new spin on classics: think locally sourced grilled oysters with clarified butter, shallots and parsley. A hip and relaxed space with industrial decor, take a stool in front of the open kitchen and sip on a cold one while watching the team at work. Mexican vintages feature on the wine list. There are two further branches in Mexico City.
This cosy spot in Guadalajara is unsurprisingly dedicated to agave, with a menu that changes every single month. The team plays with flavour and presentation, with recent drinks including the ‘Don Chinar’ (a blend of Don Fulano Fuerte Tequila, Cynar, triple sec, lime, angostura bitters and fermented pineapple peel) and the mezcal-based ‘La Hurricana’, served in a repurposed candle jar. Befitting a good-time bar, there's a monthly live music programme.
