Granville Island - check out the Public Market, have a snack on the water, check out local artisans, and take a SeaBus ride around False Creek.
Stanley Park - walk or rent bikes to cycle the famous Seawall, check out the beaches (English Bay, Second Beach, Third Beach), Totem Poles, and/or visit the Vancouver Aquarium.

English Bay - closest to downtown and Stanley Park
Wreck Beach - a bit of a trek, but totally worth it! Head down to to the UBC campus, and then take the 500+ stairs down to the beautiful (and clothing optional) beach. Watch out for naked hippies and make sure you save some energy to climb back up those stairs at the end of the day!
Spanish Banks and Locarno Beaches - kinda like Wreck, without the stairs and nudity ;)
