Our Story

Stephanie &amp; Conor first met on 1st March 2020. Conor was on a solo cycling trip around Derry &amp; Donegal where after a swipe and a match they met up for a pint in Peadar's on Waterloo Street. The pint quickly turned in to two pints, then a few more in Sandino's to finish the night. On the way to grab a taxi at the end of the evening, they shared their first kiss outside the Guildhall where now, over 5 years later, they'll be exchanging their marriage vows. At the time, Conor was living in Waterford so neither of the two thought they would see each other again, but a few days later, Conor was coming back through Derry and asked to meet up again. Stephanie was due to attend the Earhart Gin Launch that evening in the Walled City Brewery, so instead of turning him down, she invited him along. Unbeknownst to him, the Gin Launch would be a room filled with a lot of Stephanie's closest friends! But obviously Conor held his own, chatting with everyone and getting well and truly acquainted, and when they were leaving that night it was clear something was brewing. Two weeks later, Stephanie drove down to Waterford to hang out with Conor and his brother Kevin with her two huskies in tow. Not long after arriving however, lockdown was announced and she had to quickly drive the 5 hour journey back home. The next few months were filled with long phone calls, zoom dates, and planning future visits. Then when COVID restrictions began to ease up during the summer, they made regular trips up and down the 250 miles between Derry and Dunmore East and started dreaming about where this could go and some big ideas for the future... In August 2020, Stephanie purchased a 1980's caravan to renovate in to a coffee van and roped Conor in to helping along and together then on 20th May 2021 they opened up a little coffee business called Offing. They served one Americano that day.Not long after that, Conor made the move to Derry officially earning the title of Step-Dog-Dad, joined a local software company, became an active member of Foyle Cycling Club and got on a first name basis with the local pub owner. A true Derry Man. They then spent the next 5 years travelling, having dance parties in the kitchen, hiking with the dogs and building a cafe. Now, they're preparing for the beginning of the rest of their lives.
