Yes, you should absolutely book all of these things in advance. July is very busy in Ireland and booking in advance will allow you to see and do what you want at your preferred time.
How to get to Waterford from Dublin?
You can rent a car, take the bus, or take the train. In a car it takes about 1 hour 45 minutes, bus takes about 2 hours 20 minutes, and train takes about 2 hours 18 minutes.
Rental Car Information
You can rent a car from the Dublin Airport. Just remember, you'll be driving on the opposite side of the road. Apple Maps work very well.

How early do I need to show up to Dublin airport?
If flying directly back to the US from Dublin, we advise you arrive at the Dublin airport 3 hours early because you will need to clear US customs. US customs is after the initial security and there is another long line you need to go through before you get to your gate.

The Granville Hotel- The Granville Hotel is in downtown Waterford City. It's about a 15 minute drive to Waterford Castle. Transportation to Welcome Party and Wedding are not arranged, but taxis are readily available.
