Sean met Kate in 2019 through the Denver Gaels, playing the ancient Celtic sport of Hurling. Sean was a seasoned hurler and it was Kate's first year...let's be honest she really only joined the team on a tip that there may be some eligible bachelors on the team she could date. Well, mission accomplished. As luck would have it, Kate is terrible at sports and needed a lot of extra help from a helpful hurler and Sean wasted no time volunteering for the job. They then had their first official date, which was a day date I might add, for brunch at the Denver Biscuit Company and the rest was history. You probably want to know some more of that history and how they ended up engaged and getting married in a castle in Ireland.... Both Sean and Kate have a serious passion for everything Irish - the culture, people, history, and traditions. They truly bonded over that shared love of Ireland and have both always dreamed of getting married there. When does that ever happen? I'm getting ahead of myself though - back to 2019 and the start of an epic love story. These two fell in love fast and hard over their first year together that included trips to Hilton Head and Ireland, moving in together in Arvada, moving again in Arvada, and going into the start of quarantine in 2020. If they could put up with each other through all that in the first year and still like each other, then they can probably do anything together. This makes their story sound all lovey dovey, but if you know them best you know that Sean and Kate tease each other constantly and bicker like an already old married couple, but the love and trust they have for the other is actually kind of sickening (in a good way). You ready for the proposal story? On their 2 year anniversary, Sean had planned another brunch day date at the Denver Biscuit Company, where they had their first date. Thinking he was clever, he gave Kate a beautiful emerald Claddagh ring as a gift without proposing. You read that right. Kate was successfully thrown off now because she thought she knew something was up. Sean is not good at hiding things and she knew her best friend was in on it. After leaving brunch and strolling the shops on Tennyson, Sean asked to see the ring and ended up getting on one knee in front of Kate's favorite jewelry shop (unbeknownst to her). It was all a blur, but she obviously said yes! She really should have hesitated and made him sweat it out. Once Kate realized this shop was here and wanted to go in, Sean was ready with an appointment for her to design her dream ring. If you are still reading, I am either truly impressed or slightly concerned that you are kind of obsessed with this couple... Anywho, planning for the wedding took a backseat to them purchasing a vacation home in North Carolina last year and the uncertainty of international travel with Covid, but they knew everything would fall into place. Which it did because the castle in Waterford is set, which is a literal dream come true for them. This place is so special to both Sean and Kate and they cannot wait to share and celebrate tying the knot with their closest friends and family. After they fully recover from all the drinking and dancing in Ireland, they plan to do it all over again with a brunch reception in Colorado as a way to celebrate with everyone that wasn't able to make the ceremony. Plus it's just a good excuse to have another party. Sláinte!

The Waterford to Mallow railway line was laid in 1872 and was lauded as the most scenic in Ireland as soon as it opened.The final train made the trip along the remaining Waterford to Dungarvan in 1987 after a factory producing magnesite crystal closed down.Three fallow decades later the 46-kilometre route has been resurfaced with asphalt for cyclists and walkers.You’ll begin by the banks of the River Suir and cross three historic viaducts with panoramas of the countryside.There are lush gorges taken over by vegetation, ruined stations (Durrow) and the Ballyvoyle tunnel on the way down to Dungarvan on the coast.If you need a set of wheels you’ll find hire shops that also rent out e-bikes, and lots of places to stop on the way for a drink or ice cream.

Ireland’s only museum devoted solely to medieval times preserves two Medieval chambers.One is the Choristers’ Hall from 1270, a residence for the dean of Waterford Cathedral, while underground you can make your way through the Mayor’s Wine Vault from the 15th century.One of the most spellbinding exhibits is the Cloth of Gold vestments, the only complete set of Medieval vestments in Northern Europe.Dating to 1460, they are made from silk woven in Florence and then embroidered in Bruges in 1460.
