Tradition and authenticity: Chef Silvia likes to be called ‘La Massaia’. Using the teachings of her grandmother Carola, her mother Mirella and aunt Egle, all strong women from families of charcoal burners and woodcutters in the Casentino area, help her to create dishes from the past.

A simple cuisine with ancient flavours like her grandmother used to prepare for everyone in the hut in the woods, next to the wood that burned into charcoal. This is the vision Silvia has in her head during the creation and preparation of the dinner.
