Loback starts his day between 3:30-4 a.m. Monday through Saturday in order to prepare fresh baked products before the store opens at 6 a.m. All the baking is done in the store, and Loback finishes baking anywhere from 10 a.m. to 4 p.m., but he is usually done around 9 a.m.
He preps for each morning by setting up a sponge dough the night before. All the baking is done as it has been over the last 75 years.
