Niko approached Maralee in the winter of 2023 at the gym and opened with what he believed was the most important question possible: Greek or Italian? Maralee answered Greek, and by the end of the conversation, Niko had already made a dinner reservation for that Friday. Bold move. It worked. What followed were snowy dinner dates, restaurant hopping, and cooking together in Maralee’s tiny studio apartment in Shirley, where the kitchen was small, the heat was unreliable, and yet everything felt just right. Somewhere between shared meals and late-night phone calls that turned into early mornings, it became clear they never wanted to be apart. As the seasons changed, their lives naturally intertwined. They met each other’s families and friends, traveled together to Punta Cana, Albania, Greece, Canada, and Mexico, and Niko slowly won over Maralee’s cat, Pepper (who now very clearly has a favorite parent... and it's not Maralee). They bonded over documentaries, learning new things, long hikes, ski trips, and most importantly, enthusiastically critiquing food. In 2024, they moved into their first apartment together in Burlington, happily upgrading from Maralee's studio to a home filled with laughter, love, and a much bigger kitchen. They cooked, hosted, rearranged furniture more often than necessary, and realized they were building something special, something that would grow bigger than just Pepper. When they planned a trip to Italy, Maralee jokingly told Niko that if he didn’t propose, she would. Museums and churches were non-negotiable (Maralee’s rules), while restaurants were absolutely Niko’s domain. After a week of sightseeing and eating extremely well she began to wonder if she might actually have to follow through - until she noticed the suspicious outline of a ring box in the fanny pack Niko refused to part with. Two days before heading home, Niko suprised Maralee and pulled off the proposal of the century on Lake Como, aboard a wooden boat with live music playing their favorite Italian songs. They probably should have eloped right there... but with a love this big, they couldn’t imagine starting the next chapter without the people they love most. Now it’s time to celebrate with great food, strong drinks, a packed dance floor, and all our favorite people in one place! We can’t wait to do this with you!🥂
