Mindy and Eric met on November 30, 2014, at a house party, which was actually groomsman Kenneth Joong’s birthday party. Eric noticed Mindy, ever so lovely, walking into the party and eventually walked over and sat in front of her. They would proceed to get to know one other and even danced through the night (Yes, Eric danced. A rare occurrence that was strictly to endear himself to Mindy who, as usual, was dancing up a storm). A week later, Eric asked Mindy out for lunch and she agreed and suggested a sushi spot in Markham. Admittedly, Eric is a bit of a sushi snob and this is not a spot that he would ever consider. Also, he lived downtown at the time and wasn’t keen on dates in the suburbs. However, for Mindy, he acquiesced. Thus, began their journey.

Over the next three years, Eric would end up travelling much farther than Markham with Mindy; to New York, San Francisco, Barcelona, Seville, Madrid, Paris and Amsterdam among other great cities. Yet, most near and dear to their hearts, Tobermory, is much closer to home, and where they return each year.

Throughout their journey, many, many photographs would be taken, as Eric is an avid photographer. Many, many shows and movies would be watched, as Mindy is a Netflix aficionado. And much sushi would be consumed (though Eric did step Mindy’s sushi game up).

Eventually, Eric would move to North York and Mindy settled in with him. It was here, at his condo, where Eric proposed to Mindy on January 18, 2018, and appropriately, self-captured the moment by triggering his camera through his phone.

Nearby, in North York, is also where Mindy and Eric are set to be married on April 6, 2019.

Both are now looking forward to celebrating with their family and friends and to beginning the next chapter of their journey.
