Hey you guyyyyyyyyys! The shore is about 1.5 hours away. Cannon Beach is a great one and Astoria isn't far north from there. Tillamook is another option with a large cheese selection for an oceanside picnic.
Mt. Hood is beautiful! A fun way to see it is at Timberline Lodge. There are a few dining options, tons of hikes, and cute towns to drive through. It's about 1.5 hours from Portland.

The food in Stumptown is top notch—even at the food carts. A few Steph and Daniel favorites:

~Eem (Thai BBQ, but the wait can be enormous)
~Fuller's Coffee Shop (no-frills breakfast diner)
~Lardo (several spots around town for delish sandwiches)
~Matt's BBQ Tacos (breakfast tacos—don't sleep on them)
~McMenamin's is a local chain that has kitschy decor (Kennedy School has a Detention Room converted into a bar, for example)
~Parkside (our friends own and run this place, which makes great food and mock/cocktails)
~Pine State Biscuits (several locations throughout the city)
~Please Louise (wood-fired pizza)
~Por Que No? (delicious Mexican food)
~Prost (German beer hall with food cart pod outside)
~Salt and Straw (cleverly flavored ice cream)
