One fateful night on December 28, 2012 Veronica went out for dinner with her friends. After dinner, they decided to have drinks at Royal Oak. Little did she know that Jim was there and on the prowl...

Less than 24 hours later, they were on their first date at Cedar Creek. After three hours of conversation, Jim realized he had met someone special. Almost three years have passed and he knows he was right. Veronica hasn't stopped talking since.

Since then, Jim and Veronica have been on adventures throughout Texas and the country, spending time together hiking Enchanted Rock, watching Baylor in Waco, and navigating the waves at Waimea Beach Park. Now, they are thrilled to celebrate their love with their best friends and loved ones and to get ready for all of the future adventures they will have.

Jim invited Veronica over for a romantic dinner and night on the town. Veronica immediately knew something was amiss because he had made reservations, which he never does. That said, it was still a surprise to her when Jim dropped down on one knee and proposed to her before dinner at their favorite restaurant, Poscol.

The night was closed out with an evening with their best friends Katie and Brian at the spot where Jim and Veronica met - Royal Oak (picture above).
