For those coming from Australia....
The most sensible way to travel from East Coast AUS to Mexico is via California (ie: SFO or LAX). From both of those airports, you can fly direct to Cancun. It is also possible to travel via Dubai/Europe, if desired, but it's a much longer trip.
Flights transiting through USA generally leave East coast Australia either first thing in the morning, or as a red-eye late at night.
At the time of writing, the most direct and quickest flight is through United Airlines; travelling Brisbane > San Francisco > Cancún
For those coming from the United States...

Flights from Seattle generally leave in the morning, and arrive mid-afternoon, depending on layovers.
Flights from LAX and NYC depart at all hours of the day and arrive accordingly.
At the time of writing, the most direct and quickest flight from Seattle is with Delta; travelling non-stop from SEA > CUN (7.30am - 4.06pm)
