Big & Little Cottonwood Canyons and Millcreek Canyon has awesome hikes that range from super easy to strenuous. The All Trails App is a good way to find ones. Some of our favorite include:
Grandeur Peak (MCC) - challenging
Lake Blanche (BCC) - challenging
Broads Fork (BCC) - challenging
Salt Lake Overlook via Desolation Trail (MCC) - moderate
Circle All Peak (BCC) - moderate
The Livingroom (eastern bench) - moderate
Cecret Lake (LCC) - easy/moderate since the summer road hasn't opened it will be a longer hike, will probably still have some snow
Pipeline Trail (MCC) - easy to moderate to hard, depending how far you go
Silver Lake Loop Trail (BCC) - easy
Ensign Peak - short steep jaunt, provides a great view of the valley!

Depending on the weather, I would recommend mtn biking in the valley (e.g. Corner Canyon, Herriman) or up towards Park City (e.g. Jeremy Ranch, Round Valley, Park City). You can rent bikes in the valley or in Park City, just Google "mountain bike rental salt lake city". Moab and southern Utah also has great mountain biking as well, if you're headed there for more Utah adventures.
