Lightfoot & Wolfville

Many of the ingredients in tonight's meal come directly from the vineyard and its adjacent farm property!


Lightfoot & Wolfville is owned and operated by the Lightfoot family, Jocelyn and Michael Lightfoot, who have been farming in the Annapolis Valley for eight generations. Michael is a seventh-generation Annapolis Valley farmer and the third generation to farm the land where the winery sits today. Jocelyn, a certified sommelier, has a background in the travel and tourism industry.


Your tomato, fresh herbs, and greens are all grown on the family farm.


The pork (from pear & prosciutto canapé), and your beef comes from Lightfoot Farms. Your prosciutto from the dish was prepared at Ratinaud in Halifax. Wheras your beef carpaccio is a Jersey x Wagyu cross that comes directly from the farm.

Noggins Farm Market


"After the Acadians were deported in 1755, the Bishop family was granted land that would become one of the oldest farms along the banks of the Cornwallis River (Chijekwtook) in present-day Greenwich, Nova Scotia (Mi’kma’ki).


John, Timothy, and William Bishop were among the first settler Planters to begin farming in 1760. They cultivated crops, fruit orchards, and dairy cows. Their hard work and dedication to the land built a farming legacy spanned generations.


Current owners Sandy and Avard Bishop took over full operations of the farm in 1955. Twenty years later, they brought their two eldest sons, Andrew and Stirling into the family business. The Bishops incorporated Noggins Corner Farm in 1992. The name “Noggins Corner” refers to the late 1800s when weary travelers bought “noggins” of rum from an old farmhouse in Greenwich. The family has worked hard to perfect the art of apple growing, which continues to be their main crop."


Today, Noggins Corner Farm is one of the oldest farms in Nova Scotia. It has seven markets across the province.


Many of the ingredients in tonight's menu, such as the seasonal vegetables, pears (in the canapé), and caponata, are sourced from them.

Roma Cheese Ltd.

Ciro Comencini founded Roma Cheese Ltd. He was born and grew up in Basson, a small Italian village near Verona. Comencini started working at a dairy farm at just six years old.


He is now based in Newport, NS, with his wife and four children. He makes a variety of cheese, but his mozzarella is featured in the late-night pizzas and summer salads. You can find his asiago in the garden salad, prosciutto & pear canapé, and beef carpaccio.

Comeau's Seafood

Tonight's menu features bacon-wrapped scallops, which are sourced from Comeau's Seafood!


Founded in 1946 in the fishing region of St. Mary's Bay, Comeau's is one of Nova Scotia's leading seafood companies. Tonight's menu features bacon-wrapped scallops!


Comeau’s Sea Foods Group of Companies was founded by Bernardin J. Comeau and Clarence Comeau in 1946 in the small fishing region of la Baie Sainte-Marie, Nova Scotia. Today, it is one of Nova Scotia's leading seafood companies!


The business stayed rooted in family values when Marcel R. Comeau joined the business, which meant so much to Bernardin. He later became president in 1981. Together, they sought out new markets, developed new products, and surrounded themselves with hard-working people from Acadian communities throughout South-West Nova Scotia.

Sober Island Oysters

Born and raised in Sackville, Nova Scotia, Trevor, the founder of the company, visited Sober Island every year as a child. His childhood love for the island propelled him to found and become the first generation of oyster farmers in his family. It also allowed him to actualize his lifelong dream of living there full-time.


After convincing his high school sweetheart and wife, Michelle, to give up their corporate jobs as an engineer and administrator, they founded Sober Island oysters in 2005. Together with their two young children they moved to Sober Island and started their adventure.


Two decades later, Sober Island Oysters are the oyster of choice in restaurants and homes in Nova Scotia and beyond.

The team at Sober Island Oysters is passionate about sustainability and its' positive impact on the ocean ecosystem. They partner with Dalhousie University to conduct aquaculture research.

ShanDaph Oysters

Established in 1999, ShanDaph Oysters is exposed to the tidal waters of Big Island, NS. This results in an optimal environment for oyster farming.


The company was founded by the owner's grandparents, Everett "Shan" and Daphne “Daph” Baudoux. Where ShanDaph oysters gets their name!


Their commitment to growing oysters resulted in the reintroduction of oyster growing and harvesting to the coastline. The native oyster seed Shan and Daph Baudoux nurtured in the 1960s and 1970s flourished into the thriving oyster beds harvested today.


ShanDaph Oyster Farm serves as Nova Scotia's only solar-powered oyster farm!

Atlantic Beef

Atlantic Beef is based in PEI, Nova Scotia's neighbor. It started off as a co-op in 2002 with 200+ Atlantic region producers. Its goal? Provide Atlantic producers with access to beef processing in the Atlantic Region. In 2003, the company was incorporated, and in 2004, its location in Albany, PEI, was founded. It's main goal, besides aiding local farmers, is focusing on responsibly raised cattle. Tonight's prime rib is sourced from them.
