Neither of us are picky eaters, and we love to cook at home together! I was raised in a Vietnamese household and cherish the food from my culture. Vietnamese food is an amazing confluence of southeast Asian staples, French gastronomy and the unique focus on herbs that result from Vietnam being a temperate coastal country on the edge of a tropical zone. Crafted Catering will be creating a Vietnamese-inspired barbeque with local upstate NY flavors, and we're so excited for you all to try it! Vietnamese tradition is also strongly rooted in community, so the food will be family-style -- there will be multiple entrees and sides at each table and everyone can take as much as their heart (and tummy!) desires.
Cocktail Hour:
Vietnamese mini bánh mì sandwich/subs, with roast pork and Vietnamese butter
Smashed cucumber salad, with sesame, holy basil, chili oil, preserved orange dressing
New York State cheeses
Vegetable platter
Salad (plated):
Romaine heart, with Ballston blue cheese (which originated in upstate NY!), pickled red onion, crispy shallots, cherry tomatoes, chives
Entrees (2)
Tiashoke farms beef brisket, with lemongrass, ginger, palm sugar
Lemongrass grilled chicken, with chili sauce
Accompaniments (3)
Maple glazed squash, with local syrup
Paffenroth gardens potatoes, with duck fat, herbs, sea salt
Jasmine rice, with Gold Bar Butter
Dessert, will be a surprise!
Of course, please let us know if there are dietary restrictions. We will let the caterer know, and they can accommodate easily!
