10/10 recommend working with byPensa! Nikki took our vision for a wedding cake and went above and beyond on the execution. The color, texture, finish, and flavor was exactly what w...
e had in mind. It truly became the hallmark of our celebration, and all of our guests were obsessed, too.
If you're looking for a creative, standout cake made by a dedicated, communicative, and thoughtful baker — this is the place! I can't wait to book my next cake with byPensa.
No exaggeration: Nikki made us the most beautiful and delicious cake for our Aug 21 wedding. From the start, we were impressed with her artistry: not only from what we saw on her w...
ebsite, but the sketch she drew out from our specifics. The sweetest little watercolor you ever saw, and it was our own little cake. She made us something so beautiful for our wedding day. It was all people could talk about. Even our very experienced wedding planner was amazed and told us the second we arrived at the venue: "You have got to go see the cake." It was a vision. And truly delicious: like it was made out of air and magic. No bias, that's what it was. Nikki, I can't thank you enough for your brilliant work.
Nikki and byPensa did an excellent job. She came to us for a tasting so we could talk through the options, and we were able to work together and provide some references to ultimate...
ly land on something we were super happy with. It was beautiful and delicious! Highly recommended.
Nikki was a great, enthusiastic partner on our cake journey. My fiance came up with an out of the box design that combined a naked cake with a topsy turvy, architectural structure....
We went to a number of tastings where we were met with a lot of inflexibility and bakers that had very specific brand aesthetics they wanted to stick to. I initially was drawn to Nikki because of her funky style and geode cakes, which I thought looked amazing. She was clearly someone that was open to experimenting! Not only did my fiance and I really hit it off with her during our tasting, but the flavors were delicious (we chose a lemon cake with rose buttercream), pricing reasonable, and she was very game to give our concept a go! She was confident she could make it work and did she ever! The end result was stunning and delicious! I highly recommend her and would use her again for another event.
I will say to be realistic about seasonal availability of produce if you are interested or choose to incorporate fruits/veggies into your cake. I had something specific in mind - pink lady apples to get an ombre effect up the side of the cake - which didn't wind up on the final cake due to, I assume, lack of availability. It would have been nice to have been told this wasn't available since it was in our contract and we were jazzed about it, but it was a minor detail in the end. Another small note is we did rent a cake stand from her, which has a refundable deposit if you return within a week of the wedding. We went right on our honeymoon after, so be sure you have someone that can run this errand for you. There was a bit of a delay getting the deposit back, but as Nikki grows in popularity I think a small delay on the admin side of things is also normal and to be expected as she juggles everything. Just have some patience :)
ByPensa was amazing! Nikki was great, we had a tasting and immediately knew she was the person to work with. The cake was tasty and beautiful! I highly recommend working with her!
Our cake was absolutely gorgeous and delicious! And Nikki was a total pro to work with! Our cake was exactly what we wanted! Could not be happier!
ByPensa is amazing! The cake was the talk of our wedding day and everyone wanted seconds. The last thing we did the night of our wedding was lay in our hotel bed, my husband still ...
in his suit, and me in my wedding dress eating whatever was left of our beautiful, delicious cake. We highly, highly recommend byPensa. The cake was truly delicious, and Nikki was a wonderful woman to work with.
Nikki is so talented and a joy to work with! I found Nikki when I tasted my friend’s delicious wedding cake and asked for her contact info. Our cake was a 3-tiered lemon cake with ...
a textured Swiss buttercream. It was absolutely delicious and I’m not sure if I can wait a whole year to eat the top we froze for our anniversary! Thank you Nikki!
Nicole made the best cheesecake I have ever had. She was so fun and calm to work with - she had everything ready to go and helped us bring the plain ol' NY Cheesecake to a wedding ...

at part of my wedding. The cake she made was beautiful, delicious, and exactly what I had pictured. On top of that she made the most amazing cookies for our favors as well. Everyone at the wedding was raving about them!! I couldn't have asked for a better baker to work with and make by vision come to life. I can't wait to use her for all of my future parties and events!!

ul and patient to work with throughout the process – I changed my mind several times about how many to order / what I wanted. I originally ordered sun and orange cookies, and later added a wedding gown design as well. I left the creativity up to the professional and I couldn’t be happier with how they turned out! Not only did she make all three designs (that were delicious), I was pleasantly surprised when I opened the box and noticed different details on the bride cookies ( a fan favorite). Overall, I was so impressed with the entire process and will definitely reach out to Nicole for my next event!
Nicole made the cake for our wedding in September. We needed a four tier cake for 200+ people and with so much going on I gave her very little direction to go on. She created a ma...
sterpiece. Each layer was frosted differently but all the layers were color coordinated. We had multiple flavors and fillings. Our cake was absolutely beautiful. More importantly, our multiple tiers were delicious. Several people commented on the cake especially the handmade buttercream frosting. Nicole was easy to work with, detailed, and reliable. I highly recommend ByPensa! Thank you Nicole we couldn't have asked for a better cake!
Nicole made our wedding cake for our October 2015 wedding. From our very first meeting she was responsive, inventive, fair and meticulous. We wanted a vanilla cake with late summer...
berry preserves and a maple buttercream to highlight the onset of fall. We hadn't seen this combination offered anywhere we looked but Nicole never flinched at the ask. Our cake was unique, delicious, FRESH and beautiful--without the use of fondant--which we weren't big on. I have regularly recommended her to friends and family since then and look forward to enjoying more of her creations at future events!
