Chef Roland, his wife Pat, and their entire team catered my daughter's wedding and receive an A+ for all aspects of their service. I began the process by meeting at the venue with Pat to discuss my overall vision. She is a good listener and off...ered other good ideas. Next, I met with Roland at his kitchen where we discussed food and beverages. He offered me tastes of food that he was making for current clients for that week. These bites absolutely won me over. I confidently decided to go forward with their team. Throughout the year, I kept an email chain going with Pat to work on details. She responded in a timely fashion to all my mail. She is very easy to communicate with throughout the process. I will warn you, there is no official contract. They are a little loose in this area. This might worry you. However, I had enough people telling me that they pull off each and every wedding, so I let that worry go. Now for the big day. They delivered. As promised, their hors d'oeuvres are absolutely THE best. They serve an endless array of delights that are each visually exciting and a sumptuous treasure. Surprisingly, I did not really have a say in what would be served as appetizers. Do NOT let this worry you. This is their signature catering element and it is a giant, memorable wow for your guests. I also suggest not hurrying time-wise through the cocktail party. This is often the best part of a wedding. We had a one and half hour time allotted for the cocktail portion and guests enjoyed every minute. They also handled all our bar needs. They worked with me selecting special signature drinks. Having trays of these drinks immediately available to guests following the ceremony prevents a long line or crush at the bar. Never skimp on number of bartenders. We had three bartenders for 125 guests and it proved to be the right number for excellent service. We headed off to the dinner and the dancing tent following the cocktail reception. The dinner service was also spot on. Again, we upped the number of servers, as suggested, and it was a good decision. As a result, water glasses were filled, wine was poured and refilled often, and courses were delivered in a timely fashion. All servers presented themselves in a pleasant manner. Once again, the food was a star. We chose a salad course followed by a choice of beef, fish, or vegan. Each plate was beautiful and delicious. The salad was cold and the entrees were hot. This is not easy to do from a cook tent, but Roland has his system down. They also pass yummy mini-desserts and offer a gelato bar to accompany the cake. Again, this is a wow for guests. Overall, the entire catering effort was better than I even hoped. Most importantly, the bride and groom were ecstatic, the guests were impressed and well taken care of, and I happily wrote the checks that were definitely worth the price, which is quite fair.
