l $300 was the $4-per-person upcharge to have brisket as one of your meat selections; it was not a charge for one individual brisket. There was never a charge of $600.00. You had 75 guests, so $4.00x75 is $300.00. Your brisket was served from our carving station and was carved to order throughout dinner. Our operations manager was on-site and confirmed that there was enough brisket available for your guests, including seconds and thirds. The only person who did not receive brisket was your sister, as she was outside and came back after the buffet had already been broken down. Because brisket is carved to order, it can sometimes look like there is less available than there actually is, since we don’t put the entire brisket out at once. We intentionally serve it this way to keep it fresh and allow guests to receive the portion they would like. I’m sorry there was confusion about how the brisket service worked, but I did want to clarify that your guests were not limited to a single 14-pound brisket or a single serving. The brisket was available throughout dinner service, and we did not run out. It was a pleasure to work with you throughout the process!! Thank you for allowing us to be a part of your special day.
