When I first spoke to DISH, James Maroldi, the Coordinator, didn't know anything about Lord of the Rings (our theme) but he took the time to get with Mike, our contact for our wedding day and a huge fan of LOTR, to make our menu look and feel l...ike it could have come from Hobbiton.
Our guests were met with Lothlorien iced tea, and the delicious, wonderful appetizers were straight from the Prancing Pony. We had a first course of Buckleberry Clam Chowder (Manhattan Clam, and the best I've had), with a basket of garlic lembas bread. We had whole "Misty Mountain" boar, and Rosey Cotton's famous chicken, roasted in lemon and garlic.
I think you get the idea. The food was plentiful and delicious, and everything that I could have asked for.
When my wife (fiancé at the time), myself, and my mother-in-law met James for the first time, we went out to their facility to have a tasting of everything they might provide, and to finalize the menu. He offered us tea, coffee, wine, and made sure we had whatever we wanted- making us as comfortable as if we were in our own home. He went over every detail with us, getting our colors right on the tablecloths, making sure my wife got her Manhattan Clam chowder, and changing the appetizers he suggested so that I could get some Buffalo Chicken Spring Rolls, which were some of the most delicious things that ever went in my mouth.
We also got to sample various cakes, and ultimately decided on a cake bar for everyone else, and a small cake that looked like Bag End for my wife and myself. The cake on the day was beautiful and delicious, dripping chocolate and mixed berries when we sliced into it…. And then smeared it on each other’s noses.
I walked away from that first meeting stuffed to the gills and more than confident in our choice of caterer.
DISH was very accommodating and helpful at every turn; they helped us find the tent rental and they provided all the tables and chairs for both our reception area and the actual ceremony site on the other side of the property. We made our own centerpieces and they helped place them at the tables, as well as some mints we made as favors. They allowed us to use our own silverware that had been given us as a gift for all the tables, rather than insisting on fine china- but we did have that option if we had wanted it.
The setup, event itself, and cleanup was in the best of hands, and worth every penny. The staff was professional and efficient, and didn’t get frustrated or annoyed with the groom running around like a chicken with his head cut off, making sure everything was perfect for his wife (the sound system I got working just as guests arrived at the ceremony area). Our bartender was perfect as well, monitoring the inebriation of our guests and keeping everything in stock and cold. I appreciated his levity, and he ensured that whatever I wanted was available.
Mike even managed to get a few awesome photos of my wife while she was getting ready to ride her horse across the property, and was more than happy to share them with us.
I have rarely encountered such wonderful passion for what someone does as I encountered with DISH. Every employee I saw seemed glad to be there, and happy to help with anything they could. They genuinely wanted to make our day as wonderful as possible. Their customer service was beyond reproach, and the quality of their product overall is impeccable.
