Europe Cakes

Her portfolio was extensive and presented many options within the style of decorating we were hoping for. She was also reasonably priced. The only thing left was to try some of her cake! I am picky with cake. My mother homemade excellent cakes all my life, so many bakers struggled to impress me. Monica allowed us a cake tasting of our own after discussing some flavors my now-husband and I would be interested in. She made them into a variety of adorable cupcakes with different frosting flavors to experiment with, as well. Needless to say, I was very pleased! It didn't taste like a "store-bought" cake, which coming from me, is a high compliment! The cake tasted fresh, light, and balanced - perfect for a summer wedding with an outdoor reception! We quickly found our flavor: lemon blueberry with a blueberry filling and a lemon buttercream. It was delightful! We both really enjoyed the flavor and couldn't get enough, and many guests commented on how they loved our cake! Some said it was the best wedding cake they ever had. One guest teased that it was better than the cake at their own wedding! My only disappointment was that we met to discuss the design for the cake and confirmed it via email. My husband liked more conventional decorations, with vintage piping and pearls. I liked stripped-down, rustic styles, like horizontal ribbons/texture, naked cakes, etc. We agreed on a unique hybrid: a naked cake with vintage piping on one layer, and the horizontal texture on the base. We also liked the idea of cascading flowers from the top to the base. Our cake ended up straying from our agreed design. It also unfortunately had a divot in the frosting before even being cut into, as can be seen in one of the photos (it's on the left side of the upper tier, looking at the cake from the front). The flowers were more minimal than I anticipated, as well. All of that said, I thought the cake was adorable, nonetheless, and when it came down to it, the flavor is what won our hearts. Mistakes happen, and based on our interactions with Monica and the Europe Cakes portfolio, I believe our experience to be an anomaly, not the standard. I recommend Europe Cakes for your wedding day, for sure!
