y mom and I's tastes. With a mom who works in the food industry, not everything was hitting the spot just right. Olivia scratched every pre-set menu option and gave us full creative rights and made some MIRACLES happen! I told her some of our favorite foods, and let me tell you, Olivia is a QUEEN! Our cocktail hour was a huge hit, with a raised Mediterranean tower with a cheese and olive stand (Olives are our favorite), followed by passed h'or doeurves. We had the greatest bacon on a stick, which was another must have and a HUGE hit. I am also a shrimp and grits connoisseur, which she had served on the most gorgeous single serve spoon bowls. We had our wedding party photos arranged so that we could attend cocktail hour and have the food!
For dinner, Olivia and her team continued to serve up perfection. Customized salads, bread, and drinks to start. Our guests had the option of Chicken or Beef, and both were incredible. We choose the Fire Roasted sun dried tomato and lemon basil sauce Chicken, which was like Chicken Bryan from Carrabbas, only a thousand times better. The beef option was a Carved King Round with au jus and horseradish aioli, and was heavenly. If you get a chance to taste with Olivia, and she tells you the mashed potatoes are to-die-for, you listen, get them, and eat ALL OF THEM. Our guests had a choice of vegetables, which were cooked to perfection.
The EFS team was able to cater to guests with custom orders, such as vegans, gluten intolerance, PKU guests, and children. And as most are too busy to eat, they made sure we had boxed meals delivered to our rooms as well.
I would HIGHLY suggest Olivia and her entire team. The wait staff were attentive, polite, and in the right place at the right time! Thank you!
