I have been blessed with many wonderful vendors during this chaotic pandemic wedding season. However, the Freedoms Foundation and the Valley Forge Catering Company clearly stand out as the reason why, through these uncertain times, I had my abs...olute perfect wedding day. I am active duty Army, so I had to plan my wedding from a distance. Combine that with the changing situation regarding the pandemic, and I was overwhelmed. But after meeting Mike and Andy, I knew I was fine. I used to go to the Freedoms Foundation as a kid for their educational camps and always loved its beautiful scenery and memorials to our military. The groves and historic buildings made for a lovely backdrop where my guests could even learn some things about our nation. It felt like I came full circle returning here as an adult and as a Soldier, to get married. Originally I had planned to get married at the Valley Forge Chapel and just do a reception here at FF. Mike was great at working with me and the chapel to help coordinate it. However, when the pandemic caused us to lose the chapel, Mike helped us re-do our vision to include their beautiful lobby as our ceremony location. It was perfect for my guests, as right after the ceremony their wonderful staff brought out tables and held the cocktail hour right there. And then guests moved right down the hallway to the open ballroom with a lovely view of rolling hills and a big American flag! The guests were grateful for the convenience. But if I backtrack to even before the ceremony, due to the pandemic my guest counts, food requests, and just overall planning kept shifting and changing. Mike was just so amazing at responding quickly and working with the FF to be flexible to our changing plans. I could not believe how flexible and accommodating they are. It made me comfortable that no matter how much of my wedding deviates from my original vision, it will be wonderful. Mike talked to us a like an old friend, sharing meals he was preparing with his wife while in quarantine. And who better to help execute your wedding than old friends?! The food was amazing and absolutely gourmet. Again, as a credit to their flexibility, they even served the homemade lumpia my mother made, which for us is a Filipino tradition. She was besides herself seeing HER food on serving plates carried by wait staff. That was a little detail that I appreciated so much. My guests gushed and said the food was some of the best they have ever had at a wedding. They said wedding can have a cafeteria-feel to the taste and presentation. They wanted more of VF Catering though! Big credit to Andy for helping me figure out what I wanted by giving me a VERY detailed gourmet menu of meals he has prepared in the past and was particularly good at. And the filet mignon he prepared for me special as the bride is still one of the best I have ever had. And I have been stationed in Texas and Oklahoma, so that is no easy feat! Lastly, I appreciate FF and VF Catering, especially Mike and Andy, being very cognizant of COVID-19 mitigation policies and being mindful of keeping everyone healthy. The tables were socially distanced with far fewer guests than I wanted pre-pandemic, but their design of the ballroom and the venue made the wedding feel full. It did not feel like a compromise wedding. It was perfect, and FF and VF Catering are perfect. I am so emotional and grateful that the universe aligned me with them for these interesting and chaotic times. 100% recommend!
