As Master Chocolatier and founder of L'atelier du Chocolat in Jersey City, NJ, Chef Eric Girerd is renowned for his meticulously crafted, original, and tasteful wedding desserts that celebrate the timeless elegance and delectable flavors of French patisserie. With a distinguished career spanning the finest kitchens across France, Morocco, Japan, Venezuela, Korea, and New York, Chef Eric brings the haute couture artistry of French pastry to unforgettable wedding celebrations.
Chef Eric is celebrated for his spectacular XXXL wedding cakes, most notably the Mille-Feuille (Napoleon). It is the French version of the giant Millefoglie, a showstopper assembled on-site with his dedicated team, and a very trendy cake that guests are delighted to watch, as layers of crisp puff pastry, luscious pastry cream, and seasonal fruits are crafted before their eyes. The Mille-Feuilles can be customized with a variety of flavors, such as vibrant red berries, exotic passion fruit, pistachio, crème brûlée, and single-origin chocolate ganache, offering couples endless possibilities for personalization. Committed to excellence, Chef Eric and the L'atelier du Chocolat staff focus on the superior taste and quality of ingredients, preferring seasonal and locally sourced products whenever possible. His passion for flavor innovation and tradition elevates every occasion, turning wedding cakes into more than edible masterpieces.
Beyond Mille-Feuille, Chef Eric's repertoire includes giant, refined versions of the most beloved French pastries:
• Fraisier - A quintessential French layer cake, the Fraisier features airy genoise sponge, creamy mousseline, and fresh strawberries, beautifully arranged for a bright and elegant presentation, also available with raspberries instead of strawberries (Framboisier)
• Sachertorte - A luxurious Austrian classic, interpreted with French finesse: rich chocolate sponge layered with decadent apricot preserve and enveloped in a glaze of fine chocolate ganache. Also available with orange preserve instead of apricot preserve (Sacherange)
• Saint-Honoré - Named after the patron saint of bakers, this traditional showpiece combines caramel-glazed cream puffs, silky pastry cream, and crisp puff pastry into a spectacular piece of art
L'atelier du Chocolat is also renowned for its Croquembouche—a breathtaking, cone-shaped tower of delicate cream puffs, each one filled with rich pastry cream and coated in crisp, caramelized sugar. This classic French showpiece is as impressive as it is delicious, making it a spectacular centerpiece for weddings and special celebrations. Chef Eric's croquembouches are admired not only for their elegant appearance but also for their exquisite flavor and expert craftsmanship. Now available with Madeleines coated with chocolate, praline, raspberry, or pistachio glazing.
