Palmieri’s Cakes By Rachel is a bakery located in Middletown, CT since October of 2022. Palmieri's has served many couples as they celebrate their once-in-a-lifetime wedding events.
Owner and pastry chef, Rachel Palmieri, focuses on customized flavors and designs to help bring any vision to life. She uses fresh ingredients and traditional Italian buttercream to keep things light and not too sweet. In addition to wedding cakes, she also enjoys creating beautiful dessert spreads and displays, so everyone can find something to enjoy, from cake pops to French macarons to delicious cupcakes, cookies, and mousse cups. She draws on her years of experience in the industry as well as her training from the Culinary Institute of America to create new and exciting flavor profiles as well as beautifully crafted desserts.
Palmieri’s Cakes By Rachel offers a wide range of services to choose from including bridal showers and other wedding related events. On the big day, desserts can be delivered and set-up at the venue of your choosing, allowing you to focus on enjoying your wedding day without worrying about the smaller details. Free consultations available to assist you in deciding which services will meet your needs. Tasting appointments can be arranged to allow you and your beloved to indulge your sweet tooth before deciding on your wedding cake flavors and designs.

I don’t even know where to begin about how amazing Rachel is! I had a very specific vision for our wedding cake and she exceeded our expectations 10 fold! People are still asking us where the cake was from. Not only was it beautiful but it was delicious! Rachel we can’t thank you enough for your hard work in making our vision come alive. If you’re not sure if you want to book her take this as your sign to do it!

Rachel was a such a blessing!! Also we love love LOVED her cakes, I really do have to brag about the process of working with her on the cookies. I contacted at least 10 bakers before I found Rachel, all of them telling me they couldn’t do what I wanted for my cookie seating chart. When I asked Rachel she didn’t even blink! We got right into schedule a tasting for the cakes and designing both the cakes and cookies. These were a HIT with my guests! They were so cute no one wanted to eat them. However, who can resist a cookie? While most sugar cookies like this are hard, these were perfectly soft and delicious! I went back and forth with Rachel a few times to make tweaks and she was always on board and able to help. My vision I thought wouldn’t be possible came to life because of her! So so happy we found her, she is so nice to work with!!

Rachel was absolutely fabulous to work with and created the cake of our dreams (which I designed on canva) 😂 and she made it come to life and was everything I could have hoped for. The cake itself was delicious and many guests actually asked us where it was from because it was so good. Highly recommend!

Rachel made a stunning and delicious lemon blackberry cake for us on the day of our wedding. She was so responsive via phone/email. We had a circumstance where our original cake baker closed their business, and we found Rachel through The Knot's platform. We are so glad we found her! Not only did we love our cake, but our guests loved it too! We received so many compliments both on the evening of our wedding and days after. Rachel also made us some beautiful, champagne bottle themed sugar cookies to use as favors for our guests. Thank you, Rachel for your beautiful and delicious work!

Rachel is amazing! In addition to being so talented and easy to work with, her desserts are beautiful and delicious. Rachel made our wedding cake and did the desserts for my bridal shower (cupcakes, cake pops, and cookies). She also did a cake tasting with us, and helped us to get cake and cupcake stands for both events, which we greatly appreciated. Throughout every step of the process, she worked incredibly hard to make our vision come true. Our friends and family were raving about the desserts, and a few asked for her contact information so they could hire her for their upcoming events. We cannot thank Rachel enough and will be using her again in the future. Please hire her - you won't regret it!

Rachel was amazing!!! We decided to have 7 different cupcake flavors, 2 dozen brownies and a cutting cake. Everything was delicious!!! The cupcake flavors were such a talking point leading up to the wedding and at the wedding and everyone was so excited to split them and try all the flavors. Rachel was amazing to work with! I would recommend her to anyone who wants fun and delicious desserts!

Rachel was wonderful, she was incredibly friendly and baked us an amazing cake for our wedding. We had no real direction on what we wanted and she walked us through it all and was incredibly kind. Her cake tasting was great, and we tried a few of her crazier flavors for fun and ended up ordering her mint chocolate chip flavor for our entire cake! The entire experience was so much better than we had even hoped for. She did a beautiful job, the cake tasted amazing, and she had outstanding customer service. Thanks Rachel!

Rachel provided the cake for our wedding and it was perfect! It came out exactly the way I envisioned it 🥰 And not least: it was also delicious! Rachel was also super easy to work with and easy to communicate. She even offered to do a tasting, which most other vendors I contacted were not willing to do for a micro wedding. I highly recommend Palmieri’s!

I contacted Rachel to do a cake for my daughter’s Sweet 16. I know nothing about cakes so she offered me a few options and I told her to do what she thought was best. When I tell you the cake was AMAZING. I mean the cake was AMAZING. The fondant was light and fluffy. The strawberry filling was perfect. Everyone at the party raved about the cake and how wonderful it was. I had a 3 tier cake and very little was left at the end of the night. What really sealed the deal for me was the picture of the cake I sent her was very detailed. So I was prepared for a similar cake seeing as how she was not the original designer of the cake. When I seen the cake, I was floored. She knocked it out of the park. She even went online and found the exact princess and the frog cake toppers that I wanted. Also her response time to my calls/ text were answered in a timely fashion. I can not say enough about this bakery. You have to buy a cake just to experience what I am trying to relay to you. Trust me you will not be disappointed. Oh, and the price is very affordable. Once you see and taste the cake you will say one of two things. Either “this is worth every penny or man I would have paid more.” Rachel’s cakes are amazing. Definitely a bakery that you should visit.

Rachel was wonderful to work with! We did a smaller wedding cake with an assortment of cupcakes - our guests couldn't stop raving about how amazing they were! Everything was beautiful and delicious. Communication was effortless. Would highly recommend using her!

Rachel designed our cake and cupcakes for our wedding and they were phenomenal! Not only did everything look amazing, but people raved about the cupcakes. They were so good I didn't even get to taste any because our guests inhaled every single one. I highly recommend the Strawberry Lemon, Almond Raspberry, and the S'mores cupcakes. Our cake was funfetti with raspberry and I literally ate it for several days after. She was such a pleasure to work with and so accommodating. I will definitely be reaching back out to her for any future bakery needs!

Cake was amazing! Simple and perfect Rachel knew exactly what we wanted we live in Florida and were not able to see in person so she just went off the descriptions over the phone! Everything delivered on time perfectly! My aunt loved it so much she went and picked up cupcakes from here for a party a couple weeks after our wedding!

She was very accommodating to all the different flavors we wanted and made our cake look absolutely stunning. She even was able to incorporate our doggie figurines! Extremely responsive and very professional.

We started out going to Rachel for family birthday parties for our cakes and everyone is always blown away by her quick turn around time, great desserts and cheaper than grocery store prices. With our wedding being stressful enough to plan we couldn't of picked anyone better than Rachel for our day. Very easy to communicate and plan with, and its still talked about how good her cannoli's and cake was!

Rachel is THE BEST! She did all of our desserts at our wedding and our wedding cake! She was extremely professional and easy to reach throughout our entire wedding planning. When deciding on what exact desserts we wanted at our wedding, Rachel provided us with examples and plenty of options that we never even imagined. Many of our guests STILL rave about our dessert spread even a year later. Outside of our wedding she has designed cakes, and other desserts for family parties each time exceeding our expectations. I cannot speak highly enough of Rachel and her creations. She is personable, friendly, and has extreme attention to detail. You will not be disappointed! I HIGHLY recommend her for any of your dessert needs.

I contacted Rachel about doing a small one tier with lots of cupcakes and she did absolutely amazing! Not only was she quick to respond, she reached out to me throughout that time to make sure we were always on the same page. She gave us several different flavors and included a gluten free/vegan option for several guests at our wedding too. Day of wedding was smooth and easy and the carrot wedding cake (and others) were truly to die for!

Rachel made my wedding cake prior to opening Cakes by Rachel and did all of the desserts for my wedding shower and rehearsal dinner. Everyone completely raved about the desserts (cupcakes, cannolis, custom cookies, pudding cups, cake pops). She was easy to work with and wonderful! Rachel made our wedding cake for us back before she officially opened Palmieri’s Cakes by Rachel. Everyone always says “wedding cakes are pretty but they don’t taste that great,” well let me tell you, Rachel’s cakes are delicious! In my option that’s something that truly sets her wedding cakes apart from others. She can make up any flavor you dream of and it’s delicious she really makes your vision come to life. I sat with her more than once to discuss design for our cake because we wanted something a bit more extravagant than your typical white 3 tier cake and Rachel really did make our vision a reality. Our cake was three different flavors and 6 tiers high and absolutely beautiful. It was also delicious everyone still raves about how good it was, our favorite flavor is almond raspberry, SO good! Rachel also did the desserts for my bridal shower and our rehearsal dinner, beautiful spreads of cupcakes, cookies, cake pops, and little dessert cups. Her chocolate almond mousse was a favorite at my shower. Rachel was wonderful to work and my husband and I highly recommend her for all your wedding dessert needs!

Cake brings people together and a smile to their faces; that is what I fell in love with at age 14. I received a Certificate in Culinary Arts and a Degree in Baking & Pastry Arts. I worked through school and 7 years after graduation as a Pastry Chef and Wedding/Specialty Cake Decorator, where I formed my love for wedding cakes. I have created over 300 wedding cakes throughout my career. I opened my own Bakery in October of 2022 where I could start to create customized flavors and designs for each couple. I love seeing the joy on the couples faces when they see their vision come to life.
