Chef James grew up in the continental United States on the East Coast. His education includes stints at The Culinary Institute of America in Hyde Park, New York, and Le Cordon Bleu in Paris, France. He sought warmer weather amid the palm trees of Oahu, Hawaii, working at high-end resorts and restaurants. He founded Signature Sweets to serve a clientele that includes the hotels and restaurants of the island.
