With more than a decade of experience leading celebrated kitchens across the country, Chef Cody DeRossett brings a refined yet approachable style to The Publisher’s culinary program. His menus highlight locally inspired flavors, seasonal ingredients, and an unwavering commitment to exceptional hospitality. Before joining The Publisher, Cody served as Executive Chef at Hotel 1928 in Waco, Texas, where he oversaw five full- service outlets. His career also includes time at Honeywood in Lexington, Kentucky, where he collaborated with a James Beard – recognized chef, and at 21c Museum Hotels, where he honed his leadership and creative approach in dynamic, high-volume environments. Chef DeRosett’s culinary philosophy centers on mentorship, innovation, and crafting memorable experiences that connect guests to a sense of place. For him, cooking is deeply personal—a reflection of the people and stories behind every dish. One of his favorites from our Summer Menu, a Jerk Hen recipe learned from a friend in Jamaica, embodies that philosophy perfectly.

Every staff member we encountered was gracious, attentive, and genuinely invested in making our weekend perfect. They seamlessly accommodated early check-ins for our bridal party and guests, ensured our welcome bags were delivered without a hitch, and always greeted us with warmth and congratulations every time we walked through the lobby.
