we do try and accommodate as many tastings as possible for our clients. During these tastings, we bring out an assortment of menu items that are available – it is roughly half of what our menu consists of. No one who is attending one of these gets to taste the entire menu, as that would be an incredible amount of food and a logistical nightmare. There were 3 couples who weren’t put on the calendar for our spring tasting because those couples (you and your fiancé included) were part of our Fall wedding lineup and we had every intention of getting you on our summer/early Fall schedule. When we attempted to reach out to you to get you in for a tasting, you were going to be out of town for every date we gave you so we made an exception for you, and had you come into the restaurant where you tried well over $100 worth of items. brisket, pulled pork, chicken leg quarters, tri tip, ribs, hot links, garden salads, mac n cheeses, calico baked beans, coleslaws, roasted veggies, pulled pork mini tacos, You had so much food, you needed several to-go boxes to take all the leftover food home with you. Both my husband and I apologized to you for not having more “catering items” for you to try but you and your fiancé seemed incredibly pleased with what you were able to try. As for the shortage of brisket – we apologized profusely for that. That is a situation that we never want to happen, and we were incredibly embarrassed by it. We were more than willing to correct the shortage by way of refund (as I explained to your mother). HOWEVER, you are way off base when it comes to the amount of food you were missing. All your guests received appetizers of smoked sausage bites & bacon wrapped meatballs. For their entrees, every single guest EXCEPT TWO received Brisket, Chicken, green salad, roasted potatoes, smoked mac n cheese, and rolls & butter. The only thing the last two guests did not receive was the brisket and, again – I was more than willing to compensate your mother for those two brisket portions and the 12 brisket portions that weren’t available for the 12 guests who didn’t show up. Aside from that though – there was plenty of food for all your guests and leftover food from the guests who didn’t show up. Your statement of, “We tried to express our concerns privately with the Ring of Fire owner. Unfortunately, it seems the owner once again forgot about us considering we reached out a month and a half ago and have not gotten a response.” THIS IS ENTIRELY UNTRUE. I spoke with your mother (who was our point person for all communication and the one responsible for paying the bill). Her and I spoke in detail about the issues with the brisket and unfortunately were not agreeing on an appropriate resolution. She was requesting that half of the gratuity be returned to her, as she felt the entire experience leading up to the wedding day was underwhelming. When I informed her that the gratuity was just that – a gratuity to the staff who worked the 6-8 hours at the wedding and so I questioned if she was displeased with the food and the service you and your guests received on the day of wedding? She stated, no – she was actually very pleased with everything on the day of the wedding (apart from the brisket shortage). She stated that the staff was incredibly professional. They tended to all the contracted services. The food was excellent. SO, because of that, I could not justify crediting back ½ the gratuity. From a business and legal standpoint, I felt that refunding her for the missing brisket plus the gratuity she paid on that brisket dollar amount would have been sufficient. She didn’t agree. I would also like to point out that your in-laws that hosted your wedding came into our restaurant after the wedding because they enjoyed the food so much. They told us that it was the best BBQ they had ever had and went on to praise us for how great we did. I am very proud of my staff for executing another beautiful event with the poise and dedication they’ve shown for all these years. While there are rare instances where things go awry and not every detail is covered, we pride ourselves on going above and beyond and make every effort in that moment to ensure the best outcome possible for our clients. That said, I understand that there are some people in this world who just make things difficult and who simply see situations through a different lens. And while we may try to bend over backwards for these individuals, I have come to the realization that no amount of reasonable concessions or accommodations will satisfy them. My offer still stands to credit back the brisket shortage.
