Thistle and Honey Baking

If you’re looking for a gorgeous and delicious cake for your wedding cake, look no further than Thistle and Honey Baking. I got in touch with Thistle and Honey over The Knot and it was an easy process to get everything started. My fiancé and I are active duty military and we weren’t able to make it out for a cake tasting due to tight schedules. Thistle and Honey mailed us the cake slices to our home to try. They arrived fresh and were amazing! It was a difficult choice between all of her cake flavors – they all melt in your mouth. We ended up going with the Vermont Maple cake. She made us a two-tiered cake which was perfectly sized for our 12 person wedding party. Thistle and Honey made the entire process easy and stress-free. It’s almost like the cake just appeared in our dinner area when it was time to eat. The cake itself was gorgeous and it was a fan favorite. We cannot thank Thistle and Honey enough for the wonderful cake and stress-free process for our wedding day.

Nikki was so polite, warm and welcoming while helping us design our cake. She incorporated our tastes perfectly and utilized the most adorable and fitting cake topper for us. I've never thought of anyone else since to design a cake for our special moments. We kept a piece of our cake frozen to remember that night and we are thankful for Nikki's baking. She truly helped us enjoy and celebrate our wedding, just the way we wanted.

Nikki was an absolute pleasure to work with! To start, she shared her sample menu of cakes that we could taste, and provided options of either cupcakes (for a variety), or a small cake for a better idea of the cake format. Nikki worked around our crazy schedule to arrange for us to pick up the cupcakes, and even met me part of the way to her! We opted for the cupcakes to try a few flavors and WOW they were delicious. We were torn between the maple and pumpkin cakes, and ended up opting for her pumpkin cake. Once we decided on a flavor, Nikki helped us figure out the rest of the details- how much icing we wanted, what shape the cake would be, and the size of the cake. She was responsive leading up to the wedding and let us downsize when we received a flood of negative RSVPs due to Covid concerns. On the wedding day, she delivered the cake and it was so beautiful! We loved the natural look of the cake (“it looks like a tree” - our guests), and it was so delicious and a huge hit! She also gave us a separately packaged anniversary cake so we could still keep with tradition, but not have the hassle of saving it and cutting the rest of the cake at once.

The cake and cupcakes were delicious, designed to meet our theme, and she even brought them to the venue last minute even though we had planned to pick them up. Thanks for everything, Nikki!

I cannot recommend Nikki enough, seriously!! First, every single dessert that she makes is soooooooo delicious. I am not a lemon dessert person, but I could not stop eating her lemon cupcakes and whoopie pies. Second, she is an AMAZING communicator and so personable! She is timely and answers every question/concern that you may have. Third, her decorating and presentation skills are incredible!! I sent her a long list of designs that I love in wedding cakes, and she managed to touch upon almost all of them to create the most beautiful (and incredibly delicious) wedding cake. Fourth, she's super flexible and willing to work with you to provide the wedding cakes/desserts of your dreams. She has a dessert bar option and with the sweet tooth I have, I wanted a little bit of everything and she made that come to life!! For our wedding Nikki (single handedly by the way - this woman is a rock star) made a two-tier german chocolate cake, a chocolate whiskey whip grooms pie, and a dessert bar filled with mini cupcakes (raspberry-lemon, peanut butter chocolate, and maple cream), whoopie pies (chocolate, lemon, and maple), apple cider doughnuts (old fashioned and sugared), fruit tartlets, raspberry shortbread bars, and rocky road brownies for ~100 guests. Nikki provided the plating and signage, which she made sure fit into our overall wedding aesthetic. If you have a sweet tooth like me, then you need to hire Nikki. She is really the dream and will make your day absolutely perfect!!
