About this vendor
Sue Jacobs Cakes is now Whisk & Paddle Bakeshop!
My name is Erica Bentson and I bring over 25 years’ experience with me to Whisk & Paddle Bakeshop. From a young age, I was passionate about baking and cake decorating. I began by decorating cakes for friends and family in my teens. In April of 1993 I began my classical training at Western Culinary Institute in Portland, Oregon. Graduating in 1994, I then moved to Hawaii to begin my career at the Grand Wailea Resort as a pastry cook. After honing my skills there for over a year, I then traveled the continent of Europe. While traveling abroad, I was privileged to attend Le Cordon Bleu's Patisserie program in London, England, graduating with Honors and an offer to stay and continue as an instructor’s assistant.
Upon my return to Portland, I was finally able to attain my dream of owning my own business. Finales-Fine Cakes & Desserts was born in a small commissary kitchen in Portland's SE Industrial District in February, 2003. Building upon my cake decorating skills, I quickly became one of Portland's preferred wedding cake vendors. While building the wedding cake business, I also began to grow a thriving wholesale base.
Finales' wholesale business continues to flourish to this day, though under a new owner as of June, 2017. In May of 2019, I accepted the Pastry Chef position at the Facebook Data Center in Prineville, Oregon, making the move over the mountains to Central Oregon. After a couple years there, my restless spirit grew and I decided to make an even bigger move. In April of 2022, I packed up everything and made my way to Arizona.
Keeping in my family tradition of being an entrepreneur, I purchased Sue Jacobs Cakes in June of 2022 and, over the next year, transformed it into what is now Whisk & Paddle Bakeshop. A finalist in Arizona Bride’s Best of 2023 in only its first year, I am excited to continue to grow and develop Whisk & Paddle into the best place for cakes and desserts that Arizona has to offer.

le and willing to meet our many requests. We made a last minute decision to change our whole cake design a week before the wedding and she met the challenge unphased and executed on our vision FLAWLESSLY, it truly blew the Pinterest inspo out of the water. She was very understanding of the many challenges that come from organizing a wedding and was very flexible with her timeline as ours kept changing constantly. We were absolutely in love with how our cake turned out and are very happy to have picked Erica and the Whisk and Paddle team to bake our cake. If you’re looking for a great bakery that will meet your needs and do so flawlessly, Whisk and Paddle is the place to go.

Our original plan for our desserts fell through and we found whisk & paddle two weeks from the wedding- they were so flexible and understanding and made amazing desserts even with the short timeframe we gave them. 10/10 would buy desserts from them again!

Heaven in a cake! Sue Jacobs Cakes and desserts are beyond tasteful. I, unfortunately, did not get to indulge in the cheesecake bites and macarons on the day of our wedding, but I ...
heard so many compliments about how delicious they were. Sue Jacobs has a variety of cake flavors and frosting types. When we went for our tasting, we booked immediately. We knew right away she would be able to fulfill our requests and her cakes were all so delicious. It took us some time to figure out what we wanted, but we got it! Red Velvet with the classic butter cream cheese frosting and the lemon poppyseed with raspberry filling. MMMM! I would love to have a slice every morning with my coffee. Her design and finishing of the cake were miraculous.
Thank you for everything!

The cheesecake was especially a hit, which was great because it’s my husband’s favorite.
She remained very flexible through our covid postponement and this busy wedding season. She was a delight to meet and sample cakes with.
So, in short I highly recommend!

omed us during the tasting with open arms & made us feel so at ease, especially with it being our first meeting with a vendor!
Secondly, her desserts are THE. BEST. We ended up doing a dessert bar with a 2-tier cake, brownies, donuts, macarons, and cheesecake. She has so many options to choose from that you will find something for you and your guests. Our dessert table was the talk of the wedding, everyone loved it! You can easily tell that Sue & her team take their time with their desserts and put in the love & care into baking them.
I can't recommend Sue Jacobs Cakes enough & will easily go back to her for other events in the future!

lot of fun, she responds to emails in a timely manner, she made the cake exactly as we agreed upon. I really have no complaints; everything was perfect and worry-free with her.
We fell in love with Sue from the moment we first met her at the bakery! She greeted myself, my fiancé, my mother, and my sister with such enthusiasm that we knew we were in great ...
hands.
Approximately 6 months out from the wedding we met with Sue to discuss the flavors and details for our wedding cake and dessert bar. Sue most definitely made of the most of the budget we provided her with, using every last penny to create the cake and dessert bar that my fiancé and I dreamed of. We had a lengthy discussion about the design of our cake, and Sue provided such a detailed design that we were beyond excited to see the final product on our big day.
Our cake and dessert bar turned out absolutely perfect on the day of the wedding. The flavor of the cake was absolutely divine. My husband and I were too busy mingling to try any of the other desserts from our dessert bar, but many guests complimented us on how delicious the desserts we had provided were.
If we had to do our day all over again, my now husband and I would not change a single thing! Sue for Sue Jacobs Cakes was so detailed and so personable, we couldn't have selected a better cake artist for our special day.
I can't speak highly enough of Sue! She was a pleasure to work with and was always quick to respond if I had questions or concerns during the planning process. Our cake turned out ...
absolutely BEAUTIFUL! My biggest regret was not getting more than a few bites of our cake after we cut it because it was absolutely delicious! Everyone was raving about it all night. We had a 4-tier cake and each tier was a different flavor (pink champagne, chocolate, lemon, and Andes mint chocolate for the top).
DELICIOUS. The cheesecake and cake-pops were unreal! Sue made everything so easy and painless. Plus she's a real sweetheart!

e we envisioned. The cake turned out better than we imagined! Absolutely stunning AND delicious! Her frosting is fluffy and better than any others we tried. She has tons of flavor options and provides samples and cupcakes to taste them all. The fillings, frostings, and cake was delicious. We are so thrilled with how it turned out.
Sue was wonderful to work with. She was easy to communicate with, and Omgoodness!!! The cake was AMAZING! I will most likey be ordering cakes with her from now on!
I did not want a wedding cake, much to my mother's chagrin - husband does not like cake, and I've never been a fan of dried out, thin slices of cake that I've had at other weddings...
. But surprisingly, I was having a hard time finding a good baker that offered any sort of dessert buffet.
In comes Sue with the dessert buffet of my dreams! I met Sue at her bakery, gave her my vision, chose the different confections, and she made it come true! Her sweet, caring personality comes through in the confections that she bakes, and she was wonderful and easy to work with!
Her dessert and cake flavor selections are plentiful and SUPER delicious, but it was hard coming to a consensus on what we wanted because I wanted ALL OF IT! We ended up going with brownies, silver-dusted donuts, cake pops, and mini cupcakes - all of our guests raved about the desserts and we barely had any left at the end of the night!
Thank you so much Sue, we appreciate all of the hard work you and your team put in to make our wedding dessert buffet the best!
