He began his career as a line cook, working in Washington DC. Over the next several years, Simon developed and honed his craft in establishments large and small. Eventually, he worked his way up to become Executive Chef and General Manager of Seasons Culinary Services, serving firms of over 2000 people daily. In 2004, Simon and his family moved to South Florida. After working for a number of local restaurants, Simon decided that the time had finally come for him to start his own business. Simon’s areas of expertise include French, Italian, Chinese, and Thai cuisine. His menu is especially influenced by his Chinese heritage and Florida’s supply of fresh seafood.
