I went in and told them the rose I wanted, how many of each I wanted and left the rest up to them. Came out with a gorgeous bouquet. And loved the girls 3 stem rose cluster and the guys bouts were not flashy, but just enough. My bouquet kept beautifully for nearly two weeks and dried perfectly. Actually they did a smaller bouquet for my bridals and both kept really well and dried great. But roses are generally easier to dry then most.
