ef, I do understand how persnickety chocolate is to work with. Yeli has a real knack for this work. Her technique is wonderful and you will have a deliciously smooth chocolate with amazing favor. My fiance doesn't even like chocolate (he's a fruit candy type guy) but whenever we have Yelibelly chocolate in the house, we usually end up arguing over who gets which flavor.
