Let me start off by saying this story has a happy ending.
This past October my husband and I held our wedding reception at the Quad City Botanic Gardens. Because we lived in Colorado while we were planning this wedding back home it was difficu...lt to shop around for different caterers. We’d heard rave reviews from friends and family who had eaten Bridges at other events and because Bridges is the preferred caterer at our venue, we booked them without having a tasting first – it was just easiest, and we trusted those reviews. Admittedly, we shouldn’t have booked before having a tasting but in the end I’m glad we did it that way, because otherwise we might not have selected them as our caterer.
When we finally had the tasting, we didn’t know what to expect because we were going off menu – selecting to serve chili, soup, mac and cheese, baked potatoes and corn bread for our wedding meal – but even I had certain expectations that were let down. The mac and cheese was just Kraft, the chili was unimpressive and the cornbread was dry and stale.
Now, there were a few things that contributed to this: it was after Thanksgiving weekend so the bread was made the previous week, mac and cheese was traditionally only served to kids, and we were going off menu. But either way, when Tanja left the room to let us discuss it, I had a lump in my throat and a sinking feeling in my stomach. This was a disaster and we were already locked into the contract.
Thankfully, Tanja was very understanding and completely open to working on the menu and updating the options. My Mom provided different recipes for chili, mac and cheese, and chicken tortilla soup, and made requests on the presentation. The best thing was that Tanja worked with my Mom the entire time and was very accommodating to our requests. Tanja sourced out a new, gourmet mac and cheese that adults would enjoy, had her cooks tweak the chili to have more flavor, and accepted the different recipes my Mom proposed. The next time my Mom and Grandma went back for a tasting I received grade-A reviews that the catering would be good.
Fast forward to the wedding day and that was definitely the number one aspect I was most nervous about. But when I walked in the door, I was instantly happy. It looked amazing, it smelled amazing and I received glowing reviews all night long from my guests about how outstanding the mac and cheese was! We received compliments on the unique menu and the quality of the food all evening. To top it all off Bridges even had an attendant help me and my husband through the line and carry our dishes to our seats so we wouldn’t have to worry about spilling.
Bridges took a doubting non-believer and turned me around 180 degrees on the wedding day. I couldn’t be more happy with the outcome, and I’ll forever be grateful to Tanja and her team for graciously accepting our requests for changes, for creating a menu that was outside the box and for being the most professional vendors we worked with. Thank you so much for all your hard work, and the amazing service you provided.
