We loved our wedding cake from Gingerspice Bakery. From the start, Nicole was a pleasure to work with. We had so much fun tasting cake options at her cute tea room in Norcross and had a really hard time deciding on flavors! In the end, we chose a carrot cake and a chocolate cake, and they did not disappoint! The cakes were so moist and flavorful and they were decorated beautifully. We received so many compliments from our guests. Thank you, Nicole!!

Nicole was wonderful to work with. We were able to try different cake flavors at our tasting. And the final product was beautiful! And tasted so good!

I knew Nicole from Blue House Cafe and The Market, and could not wait to work with her. She was always friendly and her desserts at the restaurants were delicious. The process with the cake was so easy and worry free for me. She gave us ample information, was accommodating with the schedule for the tasting, gave us several options to try and, of course, was super nice! I appreciated that there were several plain flavors we could mix and match to make something amazing, in addition to some fantastic creations of her own. We ended up with a couple layers of the Sweet Southerner - the groom and guest favorite - and the almond cake with white chocolate ganache filling with vanilla frosting - my favorite. I told her not super fancy, not traditional, nearly naked icing. And I told her we were doing it at a brewery. It was so completely perfect. Simple and elegant. The bottom layer had a concrete looking finish, which went great with the industrial feel of the brewery. The hops were just the right touch. I couldn't have been happier.

There are a few things you should know how about Nicole: 1) She's as sweet as the treats she makes, 2) She is amazingly talented, and 3) She is super affordable! Not only was the cake beautifully designed, but each layer (chocolate, red velvet, and vanilla) was absolutely delicious! Nicole will have you and your guests in awe of the cake's design and taste! Working with Nicole for our wedding cake was a dream! The brainstorming and tasting process was one of the highlights of wedding planning -- she was so gracious and had us to her bakery to try cupcake versions of the cake flavors, frostings and fillings -- it was such a fun afternoon! Nicole was always responsive to emails and open to ideas. Our wedding cake was everything we had hoped for -- not only was it absolutely delicious, but it was beautiful! Our guests could not stop commenting on how unique and stunning the cake looked. This is not your "average" wedding cake when it comes to taste, either. The flavors are creative and the cake was truly scrumptious. We were so excited about the cake we didn't have any other desserts at our wedding (and we got married at a James Beard award winning restaurant). I can't recommend Gingerspice enough -- we can't wait to work with Nicole for all future cakes!

I would like to thank Nicole for doing such an amazing job on our cake, lemonies, macaroons, and brownies. Our display was beautiful and delicious. I could not be happier with it. I also would like to note how reasonably priced everything was. Especially considering the quality of the cake!

Upon finding Nicole with Gingerspice Bakery, I was intrigued. I was excited by her website’s portfolio of abstract yet clean presentation of cakes and the fact that if we chose her, we’d truly be supporting a small/emerging business! Following our cake tasting with her, we were sold. Her cakes are delicious! The flavors were unique and fresh. After placing a deposit, however, our experience with her went downhill. It quickly became apparent that Nicole was not as business/customer savvy as she was cake-baking savvy. Almost every email I sent her took at least two weeks to reply. More than that, though, was pricing. A big reason why we chose Nicole was the fact that her prices (for the design ideas I gave her) were within our budget- something most couples try to adhere to. I wasn’t particularly in love with one of the designs, but we had time so neither of us were too worried. Approximately two months before our wedding I sent her an idea I fell in love with and she was excited about it as well, saying she could create that design. Cool! There was no further conversation until I got an invoice from her less than 3 weeks before our wedding with an escalated design price. At no point during our previous conversation did she indicate that this final design would cost more than what I was originally quoted me. I had fallen in love with a cake design above our budget and I felt misled. Why hadn’t she mentioned the price increase when we were discussing the final design? She explained that the new design would be more labor intensive, which is fair and I respect that. This, however, should have been communicated up front. I ended up settling for one of my original design ideas, which I was ok with because, budget. When I saw the cake on our wedding day, I was underwhelmed and disappointed by the final product. The result was a far cry from the design picture. Please don’t get me wrong, I wasn’t expecting an exact replica (it was a Pinterest photo, so I was realistic) but the result was not great. The piping was sloppy and she should have used a smaller tip to achieve the look I asked for. I know this because as a hobby I decorate cakes myself and anyone who would have compared the photo to the actual cake would agree with me. It tasted fine, but her decorating skills and business management skills need work.

I loved working with Nicole. We had to switch bakers at the last minute so I took my-then-fiance to her shop to do a cake tasting. I knew we found the perfect baker for our wedding cake. She has such a great variety and is truly an artist with her work. I also loved that she had gluten free options, as my sister-in-law has celiac. Our cake was three layers, the bottom was vanilla with fresh strawberries and vanilla buttercream filling. The second layer was red velvet and I kid you not, people are still talking about the red velvet, it was that good. The top layer was the same as the bottom but made with the gluten free flour. The whole thing was beautifully put together with navy ribbon and purple flowers. 10 Stars all the way!

Our experience with Nicole was AMAZING!! Our cake was absolutely beautiful and so delicious that it was all gone at the end of the night! Our caterer was supposed to save us two slices from each layer, but that didn't happen and Nicole was more than happy to make us cupcakes at no cost so that we could enjoy our wedding cake! We are already so excited for our first anniversary so we can order a mini cake from her to celebrate. Everything from tasting, to designing our cake, to delivery/set up was flawless and I highly recommend booking Nicole @ Gingerspice to make your wedding (or other special event!) cake!

Best wedding cake I've ever had! It was a gluten free three tier chocolate cake. It was light and not too sweet and lovely chocolatey. The buttercream frosting was delicate and lovely. Everyone I talked to at the wedding mentioned how good the cake was. Children were running around with cake all over their faces. We've been enjoying the leftovers every night of our honeymoon. Best gluten free cake I've ever had. Well done. I'm so pleased.

Best bakery ever! Cakes, cookies, brownie bites - whatever you want, Nicole can make it and make it well! She made our wedding cake with customized flavors and everyone who had a slice raved about it! Plus, it was so pretty!! She also made us macarons for our favors and those were tasty as well. Wedding aside, I've had several of her other desserts and they did not disappoint either. She's a master of her craft and I highly recommended using Gingerspice any time you need a beautiful and delicious dessert!
