Obviously there were some communication mishaps that must have taken place during our experience with you. And, for that I take responsibility, as I try hard for excellence and providing memorable experiences for all. Let me try to respond to the specific issues you bring forward. I sent you and your day of event coordinator the final order many times prior to the wedding date to confirm everything that was included on the menu and service. Never did I receive any responses from your side to make changes to the order. Therefore, I assumed everything was ready to go. Nowhere does it state on the final order that you requested a "specific" salad other than the one that was originally included with the dinner. It also does not state that you requested the chips and queso to be placed at each guests table. Therefore, the chips and salsa were placed at the buffet line, which is actually the best way to keep queso warm throughout service time. It would immediately start to get cold at your guests tables. Also, we never use "paper" plates. Instead, a nice quality acrylic plate was used, as you did not request any real plates, only the dinner plate. Our "chafing" dishes at the buffet line start full of food when service begins and are replenished frequently throughout service with full warm chafers of food. It's doubtful your guests had any bad impressions of any kind other than how good the food was, as we continued serving guests returning for seconds, which indicates to me that the food was delicious and folks wanted more, as that is usually the case. Regarding the cake: Your cake was provided by an outside vendor, NOT US. We can not be responsible for the quality, consistency, flavor of cake, etc., that is brought in from other vendors. I have found that many outside vendor cakes are not of the quality as ours are. They are dry and crumbly, not moist and stable, thus making the cutting process tedious and the cake does not cut in perfect pieces. Our chefs and lead servers are very competent in cutting and serving cake. Our servers work hard and do a great job of bussing throughout the evening to make sure the space is well kept and they do not need to stay longer than the hours agreed to by the clients and to keep items from breakage by guests "having fun". I will visit with our staff again to make sure they are more aware in this process to not remove items that may still be in use. Bottomline, I'm hopeful that Kristina and Cody and your 130 guests had a wonderful and fun evening. According to our lead that evening and your wedding coordinator, that was the case. od this year has gone up so significantly, that we had no option but to raise pricing, even as slight as it was. We are sensitive to our clients' budgets, and it was a hard decision for us to do this. We haven't raised pricing in the 5 years of us doing business. Unfortunately, Covid hit us all hard, and costing for almost everything went up considerably. I'm sure you noticed that we do have a "clause" in our contract stating that this could happen should costing for food goes up significantly (over 10%), which it did. Our Chefs accidently took the leftover food at the end. That should not have happened and I'm sorry that it did. I'm hopeful that returning the costing for all of those meals helped communicate to you just how sorry I was. We are a 5-Star rated caterer and proud of our standing, and I have to say, it hurt to receive your rating. But I totally understand why you couldn't give us a 5 star. We've taken measures internally that will help to eliminate any of these issues ever happening again. And I appreciate you speaking up. We all wish you and Jason the very best in your lives together.
