I am writing this review to share my disappointing experience with Caribbean Catering (Trinity VanSteenburg, owner and lead planner). Unfortunately, my recent encounter with their services fell far short of my expectations, and I feel it's important to provide feedback for the benefit of future customers.
Event Details: Wedding at Private Estate in Florida Keys
• Event Date: 12/09/2023
• Type of Service: Catering, rentals, décor, planning
Issues Encountered:
1. Lack of Communication: Despite multiple attempts to communicate my specific preferences and requirements, there was a noticeable lack of responsiveness from Trinity. This created unnecessary stress in the weeks leading up to the event and added cost to me. See examples below.
2. Did not follow through with what was promised.
3. Over-billing/deceptive billing practices/pressure-billing
4. Lack of professionalism
5. Very poor execution of my vision
The following examples illustrate why I would not recommend this company:
1. I booked their services in early June and at this time had initial conversations with Trinity regarding my vision and planning/designing services that Trinity was going to facilitate. Then on July 5th, I sent a follow up email confirm décor options/cake etc. An entire month went by without any response from Trinity or her team, which prompted me to write another email on August 10th expressing my frustration; finally, Trinity called me that day. I was asked to create a pinterest board for her so she had a better idea of my vision which I worked very hard on in order to paint a clear picture and completed promptly. On September 5th, I once again had to initiate contact in order to go over MANY specifics that were still not confirmed on her end (flowers, stage, dance floor, lighting etc.). I made multiple requests to see the décor options she had available so I could finalize my tablescape vision, and was told that I could view them in their warehouse in Oct the day of our tasting, didn’t happen. Now just weeks before my wedding in November, I still haven’t received any confirmation regarding flowers, staging, dance floor, lighting, or their optional décor items! I sent another text asking to confirm flowers on November 1st, she responded that she would confirm that following day. A week goes by and still no follow up. I request to set another phone call, she responded 5 days later, we set a time to chat, she never called. Now just 3 weeks before my wedding, I still don’t have any quote for lighting, staging, dance floor, or flowers! Not to mention, I had to send pictures of my vision multiple times (why did I work so hard on my pinterest board??). Finally, on November 22, two weeks before my wedding, I receive a quote for the rental items previously mentioned and flowers which resulted in an increase of approx.. $10,000 to our final invoice!! Because she waited until last minute to provide me with this quote, I had literally no time to get other quotes, and had to just eliminate a lot of what I wanted. Upon expressing my frustration of the lack of communication and the pressure placed on upon me due to limited timing, she used the excuse that “no one is responding, because they are so busy”; keep in my mind that she had MONTHS to receive these quotes but SHE waited last minute to confirm them. I ended up reaching out to the rental company she was using for the dance floor and lighting, and immediately got a response and a new quote that was $1,000 less! That turned out to be the best decision, because working directly with this rental company was a breeze and the responded to me IMMEDIATELY.
2. On my original signed contract, the invoice delineated bartender costs as $55/unit. On my final invoice, the cost increased to $275/unit.
3. On the original signed contract, the invoice delineated set up/breakdown cost as $0. This was consistent with their website and contract stating that set up and breakdown was included and at no additional cost. However, on my final invoice my set up/breakdown cost was now $525. Trinity stated that the cost was “always” $500, and that she only charged an additional $25 for the extra roses and 5 extra people, which is a frankly a complete lie. I saved pdf’s of all the invoices, including the original one signed in June and all the subsequent versions up until the final invoice provided on Dec. 7th. It went from $0, to $300, to $525, with the latter increased price only appearing on the FINAL invoice I received.
4. On the day of my wedding, not only did Trinity’s team arrive 2 hours late to set up (Trinity herself didn’t get there till much later even), but multiple of these extra helpers were kids! There were two young girls setting up the décor for my reception tables, with no direction mind you. Absolutely unacceptable.
5. In addition, I bought hundreds of candles for my tablescape décor and was very clear of my vision and adamant that I wanted a lot of candles to be placed on the tables; Trinity ignored my request, stating “she didn’t want to overload the tables”. So instead, my round tables had maybe 4-5 candles and looked pathetic, and wasted my money due to numerous unused candles!
6. Outsourced rentals (dance floor, staging, lighting): The quote I received from Caribbean catering was significantly higher (each item was increased by $600) than the quote I received directly from the source for the same thing. Trinity states that she had more lighting and a bigger dance floor but that is simply not true. I even added additional lighting and it was still cheaper than her quote
7. For the bar they were to bring ice and coolers, they brought ONE old cooler with NO LID! My family ended up having to supply a cooler so the ice didn't melt. Which they ran out of by the way.
8. Left a HUGE mess of boxes after setting up for the ceremony and reception and behind the bar. It looked so tacky and unprofessional.
I encourage potential customers to thoroughly research and consider their options before choosing Caribbean Catering for their special day. It is my sincere hope that others have a more positive experience, but I felt it necessary to share my honest feedback.
Excellent, professional, flexible and accommodating. Trinity and her team were awesome from start to finish and the food was SO good! We did a variety of tacos and sides with chicken enchiladas, as well as a mini slider station and our guests raved about the food and portions. We absolutely loved the appetizers as well (especially the coconut shrimp 🍤). Trinity transformed our venue space with her decor/linens into a beautiful beach themed space for us and our guests to enjoy. I was beyond impressed day of the wedding and had zero stress bc everything was set up early, well before I even arrived to the property. Do not hesitate to use Caribbean Catering for your wedding!!!
We used Caribbean Catering to cater the welcome party for our wedding weekend last week at Islamorada Beer Co. and we are so happy we did!! Trinity and her team did such a fabulous job! They were able to set up in a discreet corner of the beer garden, pass appetizers throughout our party, set up a beautiful dessert table, and aside from passing the constant flow of appetizers we hardly knew they were there! The appetizers were incredible and the deserts divine! I would not hesitate to recommend or use them again in the future!
Debbie and her entire crew were fabulous! She took care of almost every detail (very appreciated as I was planning wedding from afar), and very nicely. Food excellent, all guests very complimentary.... and the cake was amazing! Very professional , easy to work with, and delicious food !!! The passed appetizers were our favorite!!
These people were amazing! Great people and they serve the best food you’ll ever test! I have not a single complaint about them! They were nothing shy of phenomenal!!
I cannot say enough amazing things about Debbie and her team. My venue was cancelled twice and Debbie searched high and low until she found the perfect venue! The food was absolutely incredible. Guests continued to talk about the food even after the wedding. The decorations and table setups were perfect. They made my wedding day stress free and perfect. Thank you!
Debbie and Diane from Caribbean Catering were great to work with! They helped us create a delicious menu of passed hors d'oeuvres for a cocktail party of about 50 guests. The presentation and food received great reviews from friends and family.
Caribbean Catering provided all rentals, food and decor for my wedding. The food was amazing and they were very flexible with the menu even including items that weren't standard. My guests still talk about the delicious steak with chimichurri! The setup was gorgeous and exactly what I wanted, they provided the centerpieces as well. They were very flexible and helpful when I asked about additional items. Both Debbie and Diane were very kind, nice and accommodating. We are very glad we used them :) My two suggestions - 1. Re-visit pricing on their lighting package. It was extremely expensive so I ended up buying the lights at target and having the groomsmen install them on Friday morning for about an hour or so and worked out great, they had advised against this but it turned out great and very easy to execute. 2. With the buffet setup and the 2 stations a lot of people were just doing the line in one of them and didn't realize that the other station had different food, so several people didn't get to try both the fish and the steak.. They should've been directing people a little better. - Thanks for helping make my wedding amazing!
Be careful, signing a contract with Debbie allows her to act as she wants with the end result being that she gets paid.
Without writing a review that is so lengthy it detours you from reading it, here it is plain and simple:
Our initial thought of this company was great, we met with them, chose our food items, set our price, and signed the contract (This was about 8 months prior to the wedding). Due to some unforeseen changes (pretty common in weddings, I would say), our request and details needed to be adjusted. Debbie (the OWNER), specifically, was UN-able to handle these adjustments. The changes in the price due to the adjustments seemed irrational, and because of this, we asked if we could go over the numbers again, requesting an itemized list. This not only seems like a reasonable request (especially when you are talking about spending THOUSANDS of dollars) but it seems like a simple one.
Not only did Debbie refuse to provide said list, but she became very defensive and rude when I wasn't willing to accept that answer. The cherry on top was when my mom called a day later to diffuse the tension between us, and ended up getting YELLED at.
What kind of owner not only argues about providing an itemized list but YELLS at a customer. It was very disrespectful and eye-opening how little she cares about her customers.
...Oh...and she refused to refund the deposit of $500 because she didn't deem her actions and disrespect as something that allowed us to opt out of the contract (Mind you, we are still 4 months from our wedding). Wait, What?
Had a wonderful experience with Caribbean catering. Working with Diane and Debbie was seamless and they really helped to make my wedding day less stressful so I could enjoy myself. The team was very efficient and friendly during the whole process. They have a great assortment of props and decor as well. I had compliments all night about how delicious the food was, it was a great day!
Debbie & Diane were wonderful. They coordinated so much for me and made sure my day went smoothly. They were great to work with, too. The decorations and lighting they did were great, and the food was good.
Caribbean Catering handled our food and our rentals. They set everything up and took it down so I didn't have to worry about it at all. We got tons of compliments on our food as well. We did a pig roast and it was delicious! I'd definitely recommend them!
From the moment I found Debbie online I knew that I wanted her to do our wedding. Then we met with her and were completely blown away by her and her team! Our wedding day was a breeze! We literally we able to fully enjoy every single minute of our wedding day with no stress. They take care of everything for you. So many of our guest called us after our wedding to tell us how exceptional everything was! From the food to the decor to all of the details of the entire day! We couldn't be happier with our decision to hire Debbie and her staff!
Caribbean Catering has a great team of chefs and planners. Debbie really helped us in every detail and question we had. We chose the Chefs table side Pasta Stations and the guests just loved it. They also catered our rehearsal dinner for a very good price and for great value. The food was delicious. By far the best Caterers in the keys and the cost per head was very reasonable for both the rehearsal and the reception dinner.
