My mom, Sandi, and I opened Once Upon a Cake in Beatrice, NE in 2015. We served the Beatrice area for 5 years. Once Upon a Cake, LLC made a few business changes in 2020 that led us to Utica, NE in 2020. I am a stay-at-home mom of two boys (8yrs and 5yrs) along with creating cakes. My husband, John, is a utility lineman for Norris Public Power District. Once Upon a Cake, LLC is a home-based business operating out of a non-commercial kitchen. I look forward to creating cakes for all occasions in surrounding areas!

Randi used our inspiration photos and created something exactly like what we were envisioning. We had chocolate, vanilla, and spice flavored cupcakes and our guests loved them! Our wedding cake was one of the best tasting cakes I've ever had, and even now days later the leftovers taste just as good as they did on the wedding day! Randi was very easy to communicate with and timely in her responses, and very punctual with delivery of the desserts on the wedding day. We would highly recommend Once Upon a Cake.

Randi left me speechless!! We wanted a naked cake with edible gold and cupcakes with succulents to accent off of our centerpieces. I still cannot believe how they turned out!! Not only did they look amazing, but they tasted great!! She truly went up and beyond and I couldn't have been happier!! And everyone loved them!! Her cakes and cupcakes were honestly the best desserts I have ever had at a wedding. All flavors were SO delicious and beautifully decorated. We had numerous guest come up to us the night of our wedding and the following days commenting on how AMAZING the desserts were.
Randi was even kind enough to save a box in the back of each cupcake flavor so we were able to try each flavor after the wedding. The little details and kindness are what make Randi and Once Upon a Cake a MUST for wedding desserts.
