Her time as Head Chef at Seminary Hill in Callicoon, NY, and her celebrated appearance on Beat Bobby Flay, where she impressed the legendary chef himself, are testaments to her skill and passion.

We had the pleasure of working with Catskills Catering for our wedding, and I can't recommend them enough! From the very beginning, their team was professional, attentive, and incredibly easy to work with. They took the time to understand our vision for the day and offered personalized suggestions that made all the difference.
The tasting session was a highlight—everything was delicious, and it was hard to choose just a few dishes because every option was so appealing! In the end, we opted for a beautiful family style dinner that was both elegant and full of flavor. Our guests raved about the food, especially the trout, which was a major hit. The appetizers were also top-notch, with a variety of options that catered to all dietary preferences (vegetarian, gluten-free, etc.).
The presentation of the food was just as impressive as the taste. Every plate looked like a work of art, and the staff ensured everything was served at the perfect temperature. We also opted for a dessert station, and the cake was not only stunning but absolutely delicious.
Beyond the food itself, the service was impeccable. The staff arrived on time, set up smoothly, and worked efficiently throughout the evening. They were courteous, professional, and discreet, making sure everything ran seamlessly behind the scenes. Our guests were so impressed by how the event flowed and how every need was met without any hiccups.

Our wedding planner found Carrie and got us on a call about a year out from our wedding. Carrie was awesome, super friendly, and based on our venue (a summer camp) she was thinking outloud on our call about some interesting unique dishes she could put together for our reception dinner and hors d'oeuvres, desserts table and late night snacks which really just showed to me how engaged and creative she was willing to get for us. After our call she promptly sent along a sample menu which included lots of locally sourced foods, a variety of meats and vegetable dishes, and we were very impressed. We asked her specifically if we could do a sample tasting and she said absolutely, which we booked for the summertime. We went up to the Catskills which was BEAUTIFUL and did our tasting with Carrie in Phoenicia. She was so welcoming with a beautiful set up and presented us with each dish and a paired wine that we brought, including a cheesecake dessert and samples of our after-dinner late night snacks. She gave us the backstory on herself, the business, and where she sourced her ingredients and we really left that tasting extra excited about the menu for the upcoming wedding.
Day-of went off without a hitch, the food was delicious and while I didn't eat as much of it as I should have with how much I was running around, Carrie left us our leftovers packaged to take with us.
Overall 10/10 experience and I'd highly recommend Carrie for not only her skills but her creativity in curating a menu for you, the detail she puts into each dish, and her awesome communication skills. We were literally on a texting basis so that if I had any questions she would respond right away. Thank you Carrie!
