If you want to find a wedding caterer who specializes in caviar catering and can help you execute a caviar bar, caviar station, caviar wall or your preferred presentation, knowing the right questions to ask your caterer is key to ensuring they are the best fit for your big day. In addition to inquiring about whether or not they specialize in caviar and have previously worked on caviar bars, stations and walls, Yeh notes that it is important to ask sourcing and quality questions such as, "How do you transport and maintain the caviar temperature?" "What types of caviar do you have available?" and "Where is the caviar sourced from?" to name a few.
"Be sure to clarify when the caviar will be served and for how long, how many guests will be accommodated, and whether the station will have a dedicated server or knowledgeable staff on hand," Smith adds. If the caterer you consult with has a menu, do your research by taking a look ahead of your meeting or before sending an inquiry as doing so can help you decipher if the caviar selection is what you're looking for and/or allow you the opportunity to ask whether or not you can make modifications.

"When I create anything for guests, I like to find out more about them. Are they adventurous? Are there certain foods that just completely turn them off? What makes them happy," Lilly says. You can ask your guests via word of mouth or send a survey to fill out, indicating their preferences.

"When designing your caviar bar menu, start with the selection of caviars—include premium choices, mid-range options and more sustainable, budget-friendly varieties," Smith says. Although caviar bumps are popular, there's nothing wrong with wanting to accompany this delicacy with some popular accompaniments and/or toppings. "For something unique, try mini potatoes, potato chips or beef tartare as toppings," Smith says. However, don't be afraid to keep it simple or experiment with unique pairings. Smith recommends an ice sculpture caviar bar for your big day. You can commission an artist to create an ice sculpture that matches your wedding's theme and/or is reminiscent of your love story. Just make sure to designate areas within your sculpture to place your caviar selection.
3. Caviar Cannoli
Although caviar isn't the first food that comes to mind when thinking about a cannoli, you shouldn't rule it out. Request that your caterer adorn the sides of some cannolis with caviar for a savory-sweet tasting experience. Plate them on a plate with ridges to prevent them from rolling around while serving–you're welcome.
4. Caviar Bumps
When it comes to a caviar wedding, it's hard to go wrong with caviar bumps. "I love it when the couple walks around with a tin during cocktail hour offering to spoon 'bumps' of caviar on guests' hands to slurp up and chase with some champagne," Yeh says.
