Wedding Favors: Do Jordan Almonds Go Stale?

I have purchased bulk bags of Jordan almonds to place inside small cardboard boxes as my favors. I would like to assemble them in advance, but I'm not sure how long they will stay fresh in the cardboard boxes. Will the almonds go stale?

A:

A good time to fill your favor boxes is about two months before your wedding date. The hard candy coating on Jordan almonds helps to keep the nut inside fresh for quite a long time. But the answer to your question also depends on what color almonds you have chosen: white almonds last for many months while colored almonds should be used within 3-4 months of purchase, as the colors may start to fade. Foil-covered gold or silver almonds should also be used within 4 months. All almonds should, of course, be stored in a cool, dry place away from direct exposure to light.
